Phat Food

If you're going to eat beets, you may as well eat Phat Beets.

Beets are on the list of desirable foods because of their high vitamin, mineral, and fiber content, but frankly I don't much care for the unseasoned taste. Pickling with lemon juice, vinegar, brown sugar, onions, ginger, and other spices makes every hard vegetable (e.g., carrots, cauliflower, cucumber) palatable, even tasty. Also--and this may be psychosomatic--I get indigestion when beets are not pickled.

So, more phat beets for me.
